Wild Food Recipes – Nettles

stinging_nettle.jpgNettles are another free food in abundance and don’t worry, they don’t sting once they’re cooked! Nettles are high in nutrients, they’re an excellent source of calcium, iron and magnesium.

The best leaves to use are from the new shoots in springtime, however, the new leaves at the top of older plants can be used. Older shoots and leaves tend to be bitter and stringy, so they are best avoided.

When harvesting, make sure you wear gloves, obviously and don’t harvest near roadsides or derelict land. Wash the leaves thoroughly to get rid of any grit. [Read more...]

Euro Blogging By Post

ebbp_6.jpgThe 6th round of Euro Blogging By Post is about to kick off and there’s just a few more days left to register. Euro Blogging By Post is all about sending a randomly selected “partner” a small food parcel and receiving one in return, from another surprise participant.

Parcels will be sent on Monday 2nd October, so register with Johanna at The Passionate Cook.com before 29th September if you want to participate. Participants have to be active bloggers.

As there are participants from all over Europe, the parcel you receive could be filled with all manner of delightful things. I’ll be sending my parcel off on the 2nd Oct and I can’t wait to receive one in return. I’m eager to see what goodies I’ll get, maybe spicy chorizo from Spain, or cheese from France, or chocolates from Switzerland, who know’s!!

I need to have a good think about what to add to my hamper. I’m planning on sending 5 or 6 items produced locally to where I live, possibly even some of mum’s blackberry jam! When I finally decide, I’ll let you know what I’m sending.

As soon as I get my return parcel, I’ll let you know what I got. I’m already excited! It’s like early Christmas!

Vita-rexia!

broccoli.jpgA study commissioned by Boots Health Club has found that large numbers of young adults aged 19-24 are risking their health because of chronic lack of vitamins in their diet. Poor eating habits, binge drinking and smoking are increasingly to blame for a rise in so-called “vita-rexics” – young adults who are not receiving enough nutrients through their diet. More than half the women and one-third of the men included in the study were found to be deficient in calcium, which is essential for bone health.

A total of 96 per cent were at risk of being iron deficient, which could lead to anaemia – a condition that leaves the sufferer feeling tired and weak. Dr Ann Walker from Reading University said lifestyle choices were at fault – many people work long hours, have poor diets and little time for exercise.

I know many people would argue that taking vitamins and supplements would be an option for people with hectic life-styles. But cooking something healthy and nutritious for dinner, does not have to involve hours of slaving in the kitchen. Diagnosis – Gluten Intolerant / Coeliac

As well as being diagnosed with IBS, I also have an intolerance to gluten. So, in my quest to try new foods which don’t trigger the IBS, I thought gluten-free and gluten substitutes were a good place to start.

‘A Taste of Sussex’ Food and Drink Market

brightonfdlogo06.gifAs I mentioned in the post introducing Organic Fortnight, I was planning to visit the Brighton Food & Drink Festival Market and I did! Just as I hoped, it was a mouth-watering experience. I tasted and sipped my way around the stands, along with 25,000 others who visited the festival this weekend.

This year’s ‘A Taste of Sussex’ market was sponsored by ASDA, who are following Waitrose’s lead by including locally sourced produce in their stores. They launched their Sussex range in local stores last Friday and their stand offered the opportunity for festival goers to taste the exciting new range. [Read more...]
