Diagnosis – Gluten intolerant/Coeliac#2

pasta2.JPGOne of my other triggers is gluten. In a previous post I talked about gluten-free alternatives and I included a recipe for homemade gluten-free pasta. Which I have to admit, i have not got around to trying yet. But I have however located the pasta machine and making the pasta is on my list of things to do in the next couple of weeks.

In the meantime I had a craving for pasta and tried 2 new (to me) varieties and I have been very impressed. The first type was Organic brown rice pasta (tubes/macaroni) – Rizopia, from Infinity Foods and the second was spaghetti – Tesco ‘Free From’ range. I cooked both according to the instructions and was very pleased with the taste and particularly the texture of both varieties. They did not turn to mush and they both had a pleasant light flavour.

We had the macaroni with a creamy mushroom sauce made with fresh field mushrooms from our local farmers market, and it was delicious! The spaghetti was equally yummy with bolognese sauce. So they get full marks from me and the gluten eaters too! I’ll keep buying them until I finally get around to trying to make my own!

Diagnosis – IBS#2

peppers.jpgOne effect I am experiencing from IBS is poor absorption of vitamins and minerals. I am not one of those people who regularly takes vitamin supplements, a) because I never remember to take them and b) because I’d rather try to get them into my diet in the most natural way possible – by eating them!

So I’m trying to find recipes high in vitamins to try to compensate and for this reason amongst others, I began a series of Vitamin Rich posts a couple of weeks ago. Each week I am focusing on a different vitamin or mineral and describing the best way to get them into your diet, including recipes along the way. I know for some IBS sufferers, some of the recipes won’t be suitable because we have those certain ingredients which trigger IBS in us, so I’m looking for alternative ingredients as well. Thiamine acts as a catalyst in carbohydrate metabolism, enabling pyruvic acid to be absorbed and carbohydrates to release their energy. Thiamine also plays a role in the synthesis of nerve-regulating substances.

Deficiency in thiamine can cause beriberi, which is characterized by muscular weakness, swelling of the heart, and leg cramps and may, in severe cases, lead to heart failure and death. Although, deficiency in thiamine is rare.

The Pumpkin King

He and his wife Barbara moved to their picturesque cottage in Slindon 50 years ago and have been growing pumpkins and squashes for the last 30 years.
