chicken.jpgI confess! Until this week we have not been eating a lot of free-range chicken, eggs yes, chicken no. But as of the moment I read the Chicken Out campaign, I knew that I supported the cause and therefore would only eat free-range from now on.

On Saturday we bought a free-range chicken and various veg at our local Farmer’s Market, all in preparation for a delicious Sunday roast.

Into the cavity of the chicken, I placed 1/2 a lemon, 2 garlic cloves (peeled but not chopped), salt and pepper.
I chopped swede, carrots, parsnips and onions in chunky similar sized pieces and put them into a roasting pan.
I layed the chicken on top of the veg and sprinkled olive oil over the whole lot, followed with salt and pepper.
Then it went into the oven at 190C for about 1hr20 min.

Along with roast potatoes, we also tried Swiss Chard (Yellow variety) for the first time.

The chard was a variety of sizes, some had fairly chunky stems, so it was easier to treat it as two separate vegetables. The stems needed to cook for longer than the leaves.

I chopped the thicker stems and sauteed them with the smaller stems in garlic and butter until soft. Then I chopped the leaves and added them for the last 5 minutes - like spinach. Finally, I added a little fresh, grated nutmeg.

We feasted! In fact we sat in silence for about 10 min, just eating, then Dave said “the chicken tastes just like when we were younger” Indeed, it tasted like chicken used to, and how it should taste, firm and moist and divinely chickeny! We are Free-rangers for ever more!

Sadly we had filled our bellies before I remembered to take a photo of the chicken!!
