I absolutely adore golden syrup but it’s a really cheeky treat! Nothing else tastes like it, it’s instantly recognisable and I love it. The only thing that really annoys me, is that most of it stays on the spoon when you’re scooping it out of the tin. I’ve tried heating the spoon, oiling the spoon, I’ve tried everything but nothing really works. Yes it means I get to lick the spoon but that’s not the point!
Now, Tate & Lyle have started producing golden syrup in a squeezy bottle, an excellent revelation to me, no more spoons! It makes life so much easier, particularly for drizzling over ice cream, no more clumps of syrup.The amber lusciousness of golden syrup takes me back to childhood and although summer hasn’t exactly been ice cream weather, I couldn’t help but try to bring on a little of that childhood sunshine with this sundae.
Serves 2
Preparation time: 15 minutes
Cooking time: 10 minutes
Ingredients
25g (1oz) dark chocolate
1tbsp Lyle’s Squeezy Syrup
55g (2oz) Tate & Lyle Caster Cane Sugar
3tbsp hot water
2tsp cocoa powder
2tsp butter
1tbsp cold water
1 chocolate brownie
½ 410g can cherries in natural juice
2 scoops vanilla ice cream
Optional - adult version - 100ml cherry liqueur
Method
Place the chocolate, Lyle’s Squeezy Syrup, sugar, hot water and cocoa into a saucepan. Heat gently, stirring, until melted and smooth. Turn the heat up and bring to the boil and bubble for about half a minute without stirring. Remove from the heat and beat in the butter and cold water. Leave to cool slightly.
Crumble the brownie into two sundae glasses and drizzle about 50ml of the cherry juice or liqueur over each. Tumble in a generous amount of cherries into each glass. Spoon half of the warm chocolate fudge sauce over the cherries, top with ice cream and the remaining sauce.
Tate & Lyle have also made squeezy Chocolate, Toffee, Banoffee, Strawberry, Raspberry and Blackcurrant sauces. So, you could substitute the cherries and chocolate sauce for bananas and Banoffee sauce, or strawberries, with strawberry ice cream and strawberry sauce, there are so many possible sundaes!
