My dad has a sweet tooth and he’s been going on at my mum for ages to make gingerbread men, of all things! So, as it’s his birthday today, I’m making a giant gingerberad man for him as a surprise.
I decided to try making a gluten-free version, so I can indulge my sweet tooth too!
I did a little bit of surfing for gluten-free gingerbread men recipes and ended up combining a few different methods to suit the ingredients I already had.
Giant Gingerbread Man (GF)
Ingredients
240g Gluten Free flour
1/2 tsp Baking soda
1/2 tsp cinnamon
1 tsp ginger
1/4 tsp nutmeg
50g sugar
50g butter
3Tbsp black treacle
A little milk to mix, the amount does vary, so be prepared to experiment
Put flour, soda, spices and sugar in a bowl and mix well.
Melt butter and black treacle together and pour over the dry ingredients.
Mix with your hands! Add milk if needed to get a good workable consistency
Roll out about 5mm thick and cut into desired shapes.
Bake 10 - 15 minutes at 190C until lightly browned.
Decorate with icing and sweets as desired.
I made one huge gingerbread man and used the remainding dough to make some little gingerbread cookies.
