Profitterolls_01 Britain is going baking-bonkers! Whether it’s the credit crunch causing us to make more at home, or the encouragement we’re getting from programmes like The Hairy Bakers or Rachel Allen’s Bake! , home baking is making a big come back.

Mintel reported an increase in the market for home baking products from £375M in 2003 to £425m in 2006, they also project a further 28% growth between 2006 to 2010, making the sector worth almost £550m. Independent research for Pyrex by Category Consulting also revealed that almost two thirds of consumers are doing more home baking than five years ago and 75% wanted to do even more!

CakeI’ve often said that baking is not my strong point, and that my sister got the cake-making genes in our family, but I do enjoy it very much. There’s something very satisfying about taking a bite of delicious cake and knowing that you made it yourself. But baking isn’t just about cakes and biscuits, it’s breads and pies, quiches and pasties, making the house smell amazing, flour and mess everywhere, and above all, a lot of fun!

Of course, a major factor effecting my baking is trying to avoid gluten. Although you can easily get hold of gluten-free baked goods these days, it’s another great reason for making things myself and experimenting with different flours etc. I’d love to hear any gluten-free baking suggestions you have, from gf recipes to tips on the best flours to use and why - I’m all ears!
