I am not really a baker, those genes went to my sister! You have to be so precise with baking, where as with general cooking you can just ‘chuck’ stuff in, which is far more my style! However I do enjoy baking and it always makes the house smell gorgeous.
I was trying to find something to do with my dried orange peel and I found various biscuit recipes which I have combined to create the method below. The measurements may seem a little strange but I was converting from cup measurements; it worked, so I can’t have got it too wrong!!
Orange biscuits
Ingredients
113g butter, softened
100g sugar
1 egg
1 tspn dried orange peel, ground
2 tbspns grated fresh orange peel
192g plain flour (GF in my case)
Beat the butter and sugar in a large bowl with an electric mixer at medium speed until light and fluffy. Beat in egg, dried ground peel and fresh grated peel until well blended.
Gradually add flour. Beat at low speed until well blended. Stir in additional flour, if necessary, to form soft dough. Form dough into a disc; wrap in plastic wrap and refrigerate until firm, at least 1 hour or overnight.
Preheat oven to 400°F. Grease baking sheets; set aside.
Unwrap dough and place on lightly floured surface. Roll out dough with lightly floured rolling pin to 1/4-inch thickness. Cut dough into 1 inch squares. Place squares 2 inches apart on prepared baking sheets. Gently press dough trimmings together; reroll and cut out more biscuits.
Bake for 10 minutes or until lightly browned. Remove biscuits to wire racks; cool completely.
You can leave the biscuits as they are or decorate them. I dipped them in dark chocolate, milk chocolate and an orange icing made from icing sugar and orange juice, finally I sprinkled a little ground dried orange peel on to some of the iced biscuits.
These biscuits are a little like shortbread with a good orangey tang. They’re yummy! I just ate 4 with my morning cuppa! I must try to save some for Dave…!

This recipe sounds great, but can you make it with an alternative for sugar? My housemate is Macrobiotic Miri and she doesnt eat sugar! Can you make these biscuits with rice molasses?
