Nairns_01 I am completely addicted to oatcakes at the moment, there are so many different flavours now and they’re perfect as a snack! I got home really late tonight and arrived starving! I looked at the fridge contents and mentally totted together potential ingredients for a late night snack and then I remembered a dish idea from the Nairn’s website.

I was very much in a sweet fruity mood, so here’s what I hashed together with the fridge’s offerings, the storecupboard and the Nairn’s recipe ( for the original recipe, click here).

Strawberry Crannachan

Serves two or a very hungry one!

6 Nairn’s Mixed Berries Oat Biscuits

200g Organic Greek Style Yogurt

200g Strawberries, roughly chopped

1 Tbspn honey

1. Crush the fruity oat biscuits by putting them into a thick polythene bag, close tightly and then use a rolling pin or wooden spoon to break into crumbs
2. Set aside one strawberry to garnish
3. Blend the strawberries with the oat biscuit crumbs, yogurt and honey
4. Spoon into serving glasses
5. Top with a strawberry stuck into the mixture and a sprig of mint.
