Vitamin A plays a vital role in the growth and repair of body tissues, and is particularly important in maintaining good eyesight and healthy skin, as well as aiding in bone and teeth formation.

Symptoms of deficiency in Vitamin A, include poor night vision and a poor immune system.

Vitamin A rich foods

liver
sweet potatos
carrots
mangoes
spinach
cantaloupe
apricots
dried apricots
milk
egg yolks
mozzarella cheese

Vita-Rich Recipe 3

Mango and Melon Salad with Apricot Sauce.
Serves 4

1 fresh mango, peeled and sliced into bite-sized pieces
1/2 cantaloupe, peeled and sliced into bite-sized pieces
1/2 honeydew, peeled and sliced into bite-sized pieces
1 1/2 cups sliced apricots (fresh or tinned)
1 tablespoon lemon juice
1/4 cup confectioners sugar

Place mango and melon pieces in a large serving bowl.
In a blender,blend apricots with lemon juice and sugar until smooth.
Drizzle sauce over fruit salad and serve.
