I have yet to find a gluten free bread which completely compares to normal bread and as a result I tend to just avoid eating bready things, I can’t remember the last time I had a sandwich. I do however, eat a lot of wraps/flatbreads instead, of which there are so many varieties available now. But as with sandwiches, I find myself putting the same things in over and over, and I begin to get a little bored.
Working with Mission and their vast selection of wraps, Angela Dowden has created some recipes to rejuvenate you and give you some inspiration, if like me you’ve started to run out of ideas.
Hangover Wrap
(serves 2)
Comforting but nutritious - a combination of carbs, protein and fat to gently raise energy levels, solve the munchies and ease nausea. This will keep you going through lunch until it’s time for a healthy evening meal.
Ingredients
2 Mediterranean Herb Mission Deli Wraps
2 medium eggs
12 slices/60g dry cured chorizo (or 2 cooked chorizo style sausages, chopped)
2 slices beefsteak tomato
1/2 punnet mustard and cress
2 slices Emmental cheese
Each wrap contains 449 calories, 24.6g protein, 36.7g carbohydrate, 22.9g fat, 1.8g fibre and 1.3 fruit/veg portions.
- Scramble the eggs with just a brush off butter or oil (don’t add milk as you don’t want it to be too watery - add a little mayonnaise if you prefer a creamier texture).
- Place a slice of Emmental cheese on each wrap.
- Place half the scrambled egg on top of the cheese in each wrap.
- Add half the chorizo and half the mustard and cress to each wrap.
- Place a slice of tomato on each wrap, season to taste if desired.
- Fold up and enjoy!
